Chitin in Alternative Proteins
Chitin is a natural polymer mainly found in the exoskeletons of arthropods, such as insects and shellfish. It is a potentially interesting ingredient in the alternative protein sector due to its versatile properties and sustainability. Chitin can be converted into chitosan, which has numerous applications ranging from food to biomedical materials.
Elise's Contribution
During her internship, Elise delivered a proof of concept that lays the foundation for further research into chitin as an alternative protein source. Her thorough chemical analyses and innovative approach have provided valuable insights that will be continued by a new intern after the summer break. Elise concluded her project with a well-deserved grade of 8, successfully completing her studies.
